With Christmas around the corner I thought I’d try my hand at an allergy friendly fruit cake. And my little man gives it two thumbs up!
2 cups of Gluten Free Self Raising Flour
1tsp of Cinneamon
Two cups of Orange Juice
1kg of dried fruit – I used a combo of raisins and chopped pitted dates
Soak the dried fruit in the orange juice over night in the fridge.
Combine dry ingredients with the soaked fruit.
Line a 20cm spring form baking tin and put cake mix in and smooth the top.
Bake at 130′ Fan Forced oven for 1hr 30mins.
Dust with icing sugar to serve!
